This delicious wrap is made by my favorite plant protein- TOFU!
If you've been on a follower on my blog you know how much I love tofu. It's the jack of all trades!
This wrap also has a creamy vegan Caesar dressing that is to die for! This dressing takes less than 5 minutes! SCORE!
These wraps are super simple and perfect for any event. Work, kids lunches, parties, dinner, or if you're like me, anytime of the day!
- Tofu nuggets
- 1 block of extra-firm tofu, drained
- 1/4 nutritional yeast
- 1 tablespoon olive oil
- 1 1/2 tablespoon soy sauce
- 1/2 tablespoon smoked paprika
- 1/2 cup of vegan cheddar cheese
- half an avocado
- 1/2 cup spinach
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- Vegan Caesar Dressing
- 1 tablespoon dijon mustard
- 1/2 cup vegan mayo
- 2 tablespoon nutritional yeast
- 1 teaspoon lemon juice
- dash of smoked paprika
- 4 gluten free tortilla wrap

Preparation
- Tofu nuggets
- Preheat oven to 375. Line baking sheet with parchment paper
- In a large bowl, mix together the nutritional yeast, olive oil, soy suace, smoked paprika, salt and pepper
- Break the block of tofu into small chunks and add it to bowl. Toss tofu so each chunk is evenly coated
- Spread the tofu evenly across the baking sheet and bake for 25-30 mins, stirring halfway through, until golden brown
- Heat gluten free tortilla on skillet untill lightly browned
- Spread avocado, vegan cheese, spinach and tofu across the tortilla
- Wrap it how you like and enjoy!
- Vegan Caesar Dressing
- Add all the ingredients into medium bowl and mix together
- Top it off with smoked paprika and enjoy!
