I loved egg salad as a kid so I was so excited to create a plant-based version that gives the same taste and is a more healthy alternative.
Now, lets be real with one another. There are TONS of eggless salad recipes out there but I'm convinced mine is the best! And it's not just because my mom said so ;)
Not only does it look like a traditional egg salad made with eggs, but it tastes like it too! I'm thankful that we live in a world where vegan mayonnaise and gluten free bread exists. Because without those two ingredients I wouldn't be able to share my famous recipe with you guys!
This eggless salad is perfect for a picnic at the park, on a nice salty cracker, straight out of the bowl with a fork (how I've been eating it) or even on a sandwich! I chose to show you this recipe on a sandwich because man, the flavors all comes together when placed on a scrumptious piece of bread, gluten free of course! I don't know what it is but it just tastes different.. If you're a foodie like me, you know what I mean!

Ingredients
1 block of extra firm tofu
1 cup of vegan mayo
2 tablespoons of nutritional yeast
1 tablespoon of dijon mustard (you can use any mustard you like)
1 teaspoon apple cider vinegar
1 teaspoon tumeric
1 teaspoon of smoked paprika
pinch of salt
pinch of pepper
gluten free bread
1 teaspoon of vegan butter (optional for the bread)
If you like it spicy you can add a dash of cayenne pepper

Preparation
Press tofu for 30 mins (you can use a tofu presser if you have one) If you don't have a tofu presser: take tofu out of package and wrap with paper towel. Place it on a plate and stack heavy cooking utenils on it. This will help the juices come out.
While tofu if pressing, start making the sauce
mix all the ingredients into a bowl and make sure its stirred evenly and you start to see yellow coloring
If your sauce is not quite yellow yet you can add more vegan mayo or nutritional yeast (up to you)
Start toasting your bread
After the 30 mins is up un wrap the tofu and cut into small chunks. You can decide how you want your eggless salad to look. Some people like big chunks and some like smaller chunks. It's up to you! I prefer smaller chunks because you will have more eggless salad
After you cut your tofu how you want it you will add it to your sauce bowl and make sure it gets evenly coded
Once it's all mixed in and looks how you want it to look you can add a dash of smoked paprika! Adds a nice touch:)
