These 4-Ingredient Vegan Snickers Bars are by far my new favorite sweet treat!!

Both Vegan and Gluten free, these Snickers Bars offer a healthier, IBS-friendly alternative and can cure any sweet tooth! There are only 4 ingredients to make this satisfying recipe and tastes just like the famous candy bar everyone knows and loves.

I don't know about you, but snickers was one of my favorite candy bars as a kid. Anything that has both chocolate and peanut butter is a win for me.

At the age of 13 when I learned about my food allergies- snickers was a no go.

With my GI issues and learning what foods I can/can't eat, peanuts was one of them. So, I took all peanuts out of my diet for awhile. Yes, it was as awful as it sounds! But when I reintroduced peanuts back into my diet I started with peanut butter.

I learned that I can have peanut butter, but no raw peanuts. It's the same for cashews as well - I can have cashew cream sauce, but not raw cashews. I know that sounds weird but it's actually pretty "normal" for people who struggle with GI issues. There's something about the food being a liquid form and mixed with other foods instead of a solid.

ANYWAY!

I was on the hunt for a perfect summer chocolate-y snack that was both healthy + delicious.

These Vegan Snickers Bars are ridiculously easy and might I say:

So.Dang.Yummy.and.Addicting!

I never realized how perfect dates were for this recipe until I made it. Dates are naturally sweet and when combined with the chocolate and peanut butter it makes for a perfect Snickers Bar. And dates are a good source of potassium.

Ingredients

  • 16 (pitted) Dates
  • 1 cup of peanut butter
  • 1 1/2 cups of vegan chocolate chips
  • 1 tablespoon of cocnut oil
  • ***You can adjust this recipe to your liking. If you want more peanut butter in the filling than do 1 1/2 cups of peanut butter. Likewise with the chocolate!***

Preparation

  1. Place parchment paper on cookie sheet
  2. Take Dates and lay them out giving about a two inch space between each one
  3. Take a sharp knife and cut into the date to present an opening. Then take your index and thumb on both ends to expand the opening of the date
  4. Melt peanut butter in microwave safe bowl for 45 seconds. Stir when done to make sure it's the type of consistency you want
  5. Take your coconut oil and put it in the same bowl as the chocolate. Melt the chocolate in a microwave safe bowl for 1 min
  6. After the peanut butter and chocoalte are melted, take a spoon and put some peanut butter in each of the dates. I put the peanut butter inside the opening of the date and on top.
  7. After each date is filled with peanut butter. Take the dates and one by one place them in the metled chocolate. I used my fingers and made sure that the entire date was coaded in chooclate. Once coaded I placed it back on the cookie sheet.
  8. Let it sit for 15 mins on the coutner. After the 15 mins is up you can drizzle some left over peanut butter and make it look extra fancy;) The more peanut butter the better right?
  9. After each date is coaded with chocoalte, place the cookie sheet in the fridge for 30 mins.
  10. ***Once the snickers has dried you can ENJOY!!! Trust me they're addicting! But be sure to keep them in the fridge because they will start to melt if out for a long period of time.***
