They're the perfect summer/fall dessert and the best part about this yummy recipe is that it won't you leave you feeling bloated! No better feeling than that, right?
Made with only 9 (some used twice) ingredients, my Blueberry Crumble is not only healthy, but tastes delicious!
I love anything with blueberries and this was the perfect recipe to spice it up!
I have been trying to test different gluten free flours in my recipes and I decided to use almond and oat flour with this recipe. It was a huge success! The fluffiness of the almond flour and the way the oat flour holds the crumbles together made it turn out perfect!
I'm done stalling! Drop what you are doing and make these bars!!

- The base (bottom of the crumble)
- 1 1/2 Cup Almond Flour
- 1 cup of Oat Flour
- 1/3 Cup melted Coconut Oil
- 1/4 Cup Organic Maple Syrup
- 1 Tablespoon Vanilla Extract
- 1 Teaspoon Salt
- Berry Crumble (Middle part)
- 1 Cup Blueberries (fresh or frozen)
- 1 1/2 Tablespoon Maple Syrup
- 1 Tablespoon Water
- 1/2 Teaspoon potato starch or corn starch
- Crumble Topping
- 1/2 Cup Oat Flour
- 1/4 Cup Oats
- 2 Tablespoons Almond Flour
- 1/4 Cup melted Coconut Oil
- 1 Tablespoon Maple Syrup
- 1/2 Teaspoon Vanilla Extract

Preparation
- Preheat oven to 350
- First thing you want to do is make your base: In a medium bowl combine the almond flour, oat flour, and salt. Add in the maple syrup, melted coconut oil, and vanilla extract. Mix well.
- Add the mixture to a greased baking dish and make sure its evenly flatten.
- For the berry mixture: Add your berries, maple syrup, and water to a pot.
- Turn the dial to high and heat the berry mix until you see it start to boil. Use a potato smasher to get rid of the chunks. Add the potato starch and let the berry mix simmer for 5 minutes.
- Once the berries have thickened, take it off the heat.
- Now for the crumble topping: combine the oat flour, oats, almond flour, and salt. Then add your coconut oil, maple syrup, and vanilla. Combine everything together.
- Add your berry mixture into the baking dish and spread evenly. Then take your crumble toppings and flatten it out.
- Bake in oven for 30 minutes
