Super simple, super delicious Chocolate Chip Pancakes - What more could you ask for?
These are perfect for that lazy weekend breakfast in bed.
This recipe is super easy and quick to make!
I have done a lot of trial and error with my pancake recipe and I finally perfected it. When I found out I had IBS, I quickly learned that starchy carbs were a trigger for me. (amongst other things) I knew that if I wanted to eat pancakes, I would need to make a recipe that had ingredients that were good for my body.
I knew I was going to use Bob's Red Mill all purpose flour. This product is amazing. The flour creates beautiful recipes, and this was the first gluten free brand that didn't upset my stomach.
Almond milk- It adds a sweet taste and personally I use it whenever milk is required in a recipe because I like it the best.
Vanilla- Pure vanilla extract because who doesn’t love a sweet-smelling pancake??
Maple syrup- say what??? But wait, this was a game changer!

Maple syrup has a lot of health benefits:
Improves digestion
Contains up to 24 antioxidants
Has a lower score on glycemic index
Healthier alternative to artificial sweeteners
Baking powder- this helps make the pancake light and fluffy
Cinnamon- I love cinnamon and this adds the perfect flavor
Chocolate chips- need I say more?
This recipe makes 8-10 pancakes

Ingredients
2 cups Red Mill all purpose flour
1 3/4 cup almomd milk
1 teaspoon vanilla extract
2 tablespoons maple syrup
1 tablespoon baking powder
1 teaspoon cinamon
1 cup of semi sweet chocolate chips (enjoy life has the best vegan chocolate chips)

Preparation
Whisk the milk, vanilla and maple syrup in a medium sized bowl
Whisk the flour, baking powder and cinnamon together in large bowl
Heat pan over medium high heat an spray cooking spray
Add the wet and dry ingredients together, mixing until its all incorporated
Pour the chocolate chips in bowl and mix in
Ladle about 1/4 cup of the pancake mixture into the center of the pan, cooking for 2 minutes at time
Turn after the two minutes and cook for an adiitional two
