Creamy Vegan Zucchini Noodles

I've cut back on pasta because I get so bloated every time I eat it. But not with these delicious zucchini noodles. They taste just like regular noodles if not better! This recipe is perfect for anyone that is looking for a quick, yet tasty recipe.
This pasta is guilt and bloat free! That's a win win if you ask me :)

- Zucchini noodles
- Beyond meat brat
- Tomatoes
- Spinach
- Vegan butter (not needed but makes it extra creamy)

Preparation
- Turn stove top to 5.5 and add 2 tsp of olive oil
- Cook brat for 5-7 mins (browner the better) You will know when it's done when all the sides are dark brown
- After brat is done add the spinach, diced tomatoes and noodles - cook for 3-5 mins
- Add 1 tsp of vegan butter and stir
- When everything is done I like to place my brat in the bowl and chop it up! Then I add everything else and mix
- Take a bite and ENJOY
