These rolls are perfect for gatherings, a summer snack, and fun to make with friends and family!
These are my go-to appetizer at my favorite Thai restaurant.
But, due to COVID and not being able to go to restaurants, I have learned to make my favorites from home!
I was so pleased with how easy and equally delicious they were to make.
Nothing beats a creamy peanut sauce, and in my opinion, that's what makes the whole meal!
Who doesn't love a fresh new meal?
That's exactly what this recipe is!

Ingredients
Spring Rolls:
10 rice papers
10 jumbo shrimp
1 cup of spinach (or whatever lettuce or leafy green is your favorite).
1 cup shredded carrots
1 large cucumber
3 avocados
Peanut Sauce:
1 cup of Peanut butter
1 tablespoon of gluten free soy sauce
1 tablespoon of maple syrup
1 teaspoon of coconut oil
1 1/2 cup of warm water

Preparation
Take your warm water and pour into a medium size bowl
Place rice paper and press it down into the water. Remove once the paper has softened.
Place the paper onto a plate and make sure all the edges are spread out.
First, place the spinach at the center of the paper and then add the carrots, cucumbers, and avocado. The shrimp should be the last thing you place on top.
To wrap your spring roll, fold in the two sides to cover your ingredients. Then take the next two sides and fold over. Make sure the roll is wrapped tightly, like a burrito!
Continue with each spring roll
For the peanut sauce:
Place the peanunt butter into bowl and microwave for 1 minute.
Stir the bowl of peanut butter and then add your soy sauce, maple syrup, and coconut oil.
Put back into micorwave for 20-25 seconds. Depending on how creamy you want your peanut sauce to be, you can adjust and put it in the microwave for more time.
Place your rolls and peanut sauce on plate and ENJOY!
