This is the best gluten and dairy free Coffee Cake you will ever make!
Really, I'm not joking. This will knock your socks off and be the weekend favorite with the fam.
Love Coffee Cake but find yourself avoiding it due to food allergies, sensitivities, fear of bloating or guilt? Look no further, as with all of my creations, this Coffee Cake is gluten AND dairy free.
I've always had a soft spot for coffee cake. I loved that it wasn't just offered for breakfast but for dessert as well. There is something about the moist-ness that it offers or the fact that every bite I took was filled with the warmth of the cake and the taste of vanilla and cinnamon goodness.
One of the biggest misconceptions is that there is actual coffee beans in this cake. NOPE! This cake has no coffee in it what-so-ever! It was named this because it was said that this cake was served best with a nice cup of coffee. And I couldn't agree more.

Ingredients
Cake Batter
2 1/4 cup gluten free all purpose flour
1 tablespoon flax egg + 3 tablespoons of water
2 teaspoons baking powder
3/4 cup of sugar
3/4 cup coconut yogurt
2 teaspoons white vinegar
3 tablespoons vanilla extract
1 tablespoon of cinnamon
1/4 cup of plant-based milk
Cinnamon Streusel
1 cup gluten free flour
1 1/2 teaspoon cinnamon
3/4 cup of brown sugar
1/3 cup of sugar
1 stick of vegan butter
Icing Drizzle
1 cup powdered sugar
2 tablespoons of water

Preparation
Preheat oven to 375
In a large bowl, combine all the cake batter ingredients and whisk till all of it's evenly incorporated
In another bowl, combine all the cinnamon streusel ingredients, mix with your fingers until crumbles start to form.
Grease an 8-8 square baking dish and pour half of the cake batter, then sprinkle 1/2 of the cinnamon streusel evenly over the batter, before pouring the rest of the cake batter. Finish it off with the rest of the streusel.
Bake for 35 mins
For the icing: mix the two ingredients together. The icing should be thick.
