This recipe is easy and quick to make, you'll be meal prepping this every week! I've been super busy lately and have been craving a "comfort food." This bowl has it all! Do you ever just want something warm to make you feel better? Well this bowl of goodness does just that! If you love peanut butter, then this recipe is for you!

 I'm not kidding you- the minute I tried this I turned to my roommate and said, "where has this been all my life?"

I knew I wanted to make a recipe that included rice and tofu because they complement each other perfectly. What could be better than tofu and rice?!

Ingredients

  • 1 block of extra firm tofu
  • 2 tablespoons avocado oil
  • 1 bag of sticky rice (I use the brand tasty bite because it's organic, gluten free, and vegan!)
  • 1/2 cup creamy peanut butter
  • 1 cup coconut milk
  • 2 tablespoons gluten free soy sauce
  • 2 tablespoons maple syrup

Preparation

  1. Start by pressing the tofu by wrapping it in paper towels. Place on plate and put heavy object on it (I use my large cast iron skilet). Pressing the tofu is a very important step because you want to get the juices out. This will make it easier for you to cut into the tofu without it falling apart. You will press for 20 minutes. After the 20 minutes is done you will unwrap the paper towels and place the tofu on the plate.
  2. Cut the tofu into small rectangles or whichever shape you desire.
  3. Turn the stove to a 5.5 and add the avocado oil in.
  4. Place the tofu in the heated pan and allow the tofu to cook untouched for 5 minutes. Check to make sure tofu is browning and then flip and cook for another 5 minutes on the other side. After tofu is done remove from pan and let rest on cooking rack for at least 5 minutes.
  5. For the rice you will boil the pouch in water for 5 minutes. (super easy)
  6. For the sauce- in a large pan, add all the sauce ingredients and turn the heat to a 6 and cook for 10 minutes. Stir constantly, until smooth and creamy (or how you like it!)
  7. Once everything is done you will add the tofu into the peanut sauce and stir so it gets evenly combined. Then you will place the rice into the bowl and add the peanut and tofu! Now you have created a delicious meal and you can dig in!
