I love breakfast foods!

PERIOD!

And one of my favorite breakfast meals is tofu scramble. It’s packed with protein, heart-healthy and super delicious.

Have you ever heard of tofu? If you’re a vegan than I'm probably thinking yes:) Tofu is a great substitute for vegans and people who don't eat eggs. I know there's this stigma around tofu and that it tastes weird, but I promise you this recipe will change your mind!

Giving up eggs wasn’t that difficult for me. But I know for some people it may seem like the end of the world and that the thought of giving up eggs seems unbearable. Or, if you are already vegan but not quite sure how to handle that block of tofu. No worries!

I’m here to show you best way to do it!

This is by far the best way to start your day and have you feeling happy and energized. There is almost 20 grams of protein in an 8oz of tofu. Plus, it’s a great source of calcium and iron!

Tofu scramble goes with just about anything.

  • A bowl of fruit

  • Avocado toast

  • Bagel with smoked salmon and cream cheese...UM YES! (This has been my go to meal since at college)

Ingredients

  • 1 block of extra firm tofu
  • 2 tablespoon nutritional yeast
  • 1 1/2 tablespoons of tumeric
  • 1 tablespoon of vegan butter
  • 1 tablespoon cooking oil
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of salt

Preparation

  1. Start by cutting into the tofu package to create an opening
  2. Squeeze out the tofu juices in the sink (doing this helps make the tofu not runny)
  3. Turn the stove to a 4.5 and drizzle the oil around the skillet
  4. Take the tofu out of the package and place it in the skillet
  5. Use a fork to smash the tofu - I use a fork because I think its easier to press down and shape how you want it. (I like them very small)
  6. Pour the nutritional yeast and tumeric in the skillet. Let sit for about a minute or until you hear it start to sizzle then stir and make sure each tofu is evenley coded. Tofu scramble does not take long. You will know when its ready when it starts to turn yellow.
  7. Take the butter and put it in the skillet. Mix it all around until you see it becoming creamier
  8. Trasnfer onto plate and take a bite of your wonderful masterpiece!
