Preheat oven to 400. Line with parchment paper or lightly grease baking sheet
Mix all the spices together in large bowl. It should make a brown paste-like texture
Crumble block of tofu with your fingers into bowl with the seasonings. Mix all together and make sure each tofu is coated. Spread tofu crumbles evenly onto pan
Bake for 30-35 mins, stopping to stir the tofu every 15 mins. Keep close eye on it towards the end so it doesn't burn
Remove tofu crumbles from oven and serve on corn toritillas with vegan cheese, spinach and sour cream!
