Wowza Wowza these tacos are the bomb!

All vegan and gluten free! What a score;)

My favorite food is Mexican and I love a good taco Tuesday! Or maybe tacos everyday of the week?!

These vegan taco crumbles are super tasty, packed with flavor, and have just the right amount of spice

(This recipe is not spicy at all - trust me....I can't use the minty toothpaste because I think it's too spicy.)

So, what makes these tacos so special? TOFU...and love...but mostly TOFU!!!

Guys, tofu can do just about anything. If you don't believe me than check out my other recipes and see what I used for them:)

All this recipe takes is a block of extra firm tofu, a couple of spices and ingredients and you've got yourself the tastiest taco in the world.

You can store the vegan tofu crumbles in a container in the fridge for 3-4 days!

My boyfriend (who isn't vegan) absolutely loves this recipe and requests that I make these every time he comes over!

Ingredients

  • 1 block of extra firm tofu
  • 1 1/2 teaspoons of corn starch
  • 1 tablespoon gluten free soy sauce
  • 2 teaspoon chili powder
  • 2 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne (optional for more of a spice)
  • 1 cup vegan shredded cheese (So delicious vegan shredded cheese)
  • 1 tablespoon sour cream (Tofutti vegan sour cream)
  • 1 cup spinach
  • 4 corn tortillas (Mission yellow corn tortillas)

Preparation

  1. Preheat oven to 400. Line with parchment paper or lightly grease baking sheet
  2. Mix all the spices together in large bowl. It should make a brown paste-like texture
  3. Crumble block of tofu with your fingers into bowl with the seasonings. Mix all together and make sure each tofu is coated. Spread tofu crumbles evenly onto pan
  4. Bake for 30-35 mins, stopping to stir the tofu every 15 mins. Keep close eye on it towards the end so it doesn't burn
  5. Remove tofu crumbles from oven and serve on corn toritillas with vegan cheese, spinach and sour cream!
