A healthy and familiar twist to the classsic BLT sandwhich.
One of my favorite things is to take foods I had growing up and veganize them! I've actually learned that they all taste way better;)
This vegan BLT is made with smoky, sweet, and savory tempeh bacon! It's super easy and takes less than 15 minutes to make!
How to assemble your BLT:
coat each bread slice with vegan mayo
place tomato slices on top
add the spinach on top next
add the tempeh bacon to complete it
close bread together and if you want you can cut in half
Ingredients
1 package of tempeh (8 oz)
1/4 cup vegan mayo
8 slices of gluten free bread
1 cup of lettuce
2 medium tomatoes, sliced
For the tempeh bacon:
1 tablespoon avocado oil
1 tablespoon gluten free soy sauce
2 tablespoon maple syrup
1 teaspoon liquid smoke
1 tablespoon water

Preparation
On a cutting board, slice tempeh into thin or thick slices (if thick cut 1/4-inch for each slice) (If you want it thin make sure to not cut it too thin that it starts to fall apart).
Add avocado oil to pan and turn to 6. Once hot add the tempeh in and cook each side for 5 minutes until brown and crispy.
Add 1 tablespoon of water into the pan and stir.
Add soy sauce, maple syrup, and liquid smoke and stir until tempeh is evenly coated.
Let cook for 1-2 minutes then enjoy!
Put bread slices in toaster and cook how you desire. (you don't have to toast the bread)
Place bread slices on plate and coat them with the vegan mayo.
Add the tomato slices and spinach on each sandwhich
Finally, add the tempeh bacon on top and close the sandwhich
Cut in half or triangle (whichever you prefer or don't cut at all)
