Easy Vegan Breakfast Bowl!
This super delicious bowl is quick to make and packed with protein!
Sometimes you just need a warm bowl of goodness. And that's what this is!
This bowl contains tofu scramble, beyond meat brat, carrots, spinach and peppers!
I like this recipe a lot because its super easy to make and all the ingredients compliment each other really well.
I consider this breakfast, lunch and dinner...because I really could eat this anytime of the day.
One thing I noticed also and if you read my blog on "Veggies are not our friends" then you know that carrots can be a trigger for people who have IBS. But I learned that cooking them has increased their beta-carotene content (vitamin A) and is easier for my stomach to digest.
I chose to add the beyond meat brat because it is a great source of protein. It contains 16grams!!!! Say what? It's 100% vegan, gluten and soy free and contains no GMOs. It really doesn't get better than that!

- 1 block of extra firm tofu
- 1 beyond meat brat
- 10 baby carrots (really it depends on how many carrots you want)
- 1 cup of spinach
- 2 red, yellow and orange peppers
- 1 tablespoon of oil (I use avocado oil)
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper

Preparation
- Start by adding oil into pan and turn to medium high. Once sizzling add brat in and turn temp to 6. Cook each side for three minutes
- Then add in the tofu to make tofu scramble ( https://plantbasedbelly.com/recipes/the-best-tofu-scramble/ ) heres the link for the recipe
- Once the tofu scramble is done add the spinach, carrots and peppers. Mix around and let cook for 5 minutes
- Place in bowl and dive in!!!! I can't wait for you to make this yummy recipe!
