Vegan Chick’n Caesar Wrap

This delicious wrap is made by my favorite plant protein- TOFU!

If you've been on a follower on my blog you know how much I love tofu. It's the jack of all trades!

This wrap also has a creamy vegan Caesar dressing that is to die for! This dressing takes less than 5 minutes! SCORE!

These wraps are super simple and perfect for any event. Work, kids lunches, parties, dinner, or if you're like me, anytime of the day!

Ingredients

  • Tofu nuggets
  • 1 block of extra-firm tofu, drained
  • 1/4 nutritional yeast
  • 1 tablespoon olive oil
  • 1 1/2 tablespoon soy sauce
  • 1/2 tablespoon smoked paprika
  • 1/2 cup of vegan cheddar cheese
  • half an avocado
  • 1/2 cup spinach
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • Vegan Caesar Dressing
  • 1 tablespoon dijon mustard
  • 1/2 cup vegan mayo
  • 2 tablespoon nutritional yeast
  • 1 teaspoon lemon juice
  • dash of smoked paprika
  • 4 gluten free tortilla wrap

Preparation

  1. Tofu nuggets
  2. Preheat oven to 375. Line baking sheet with parchment paper
  3. In a large bowl, mix together the nutritional yeast, olive oil, soy suace, smoked paprika, salt and pepper
  4. Break the block of tofu into small chunks and add it to bowl. Toss tofu so each chunk is evenly coated
  5. Spread the tofu evenly across the baking sheet and bake for 25-30 mins, stirring halfway through, until golden brown
  6. Heat gluten free tortilla on skillet untill lightly browned
  7. Spread avocado, vegan cheese, spinach and tofu across the tortilla
  8. Wrap it how you like and enjoy!
  9. Vegan Caesar Dressing
  10. Add all the ingredients into medium bowl and mix together
  11. Top it off with smoked paprika and enjoy!
