This dessert is a game changer!

I'm talking you'll eat like six slices in one sitting without even noticing type of deal.

This recipe is going to be a bit different than my other recipes though. I usually make every recipe from scratch because with my GI issues it's extremely important for me to know everything I'm putting into my body.

But sometimes I make recipes half from scratch and the other from different products. It can be easier to do it this way if you're looking for a simple, quick recipe. If I'm being honest, sometimes it's just easier to throw different products together that make something beautiful, like this fruit pizza!

For the crust we used Sweet Loren's sugar cookie package. It's by far my favorite cookie brand. It has less than 10 ingredients which is HUGE!

For the icing we used Simple Mills Vanilla Frosting. If you love frosting than this product is for you! I swear by Simple Mills products because all of their items are organic and have natural ingredients.

But besides those two products that leaves us with the fruits! Which there's nothing like adding your favorite fruits onto a sugar cookie crust with vanilla frosting pizza!!!

For this recipe I only used three kinds of fruits.

  • Strawberries

  • Blueberries

  • Kiwi

All so bright and colorful, good for the gut and go perfectly together.

So there ya go, my easy less than 30 mins fruit pizza recipe.

I made this for a Fourth of July party and it was gone within an hour. People kept going back for more and some didn't even get to try it because it went so fast! They could not believe it was vegan and gluten free which was a win for me:)

There's nothing like seeing people's reactions to saying its vegan. They look confused, sometimes a little thrown off, and are thoroughly surprised at the fact that they just had six slices of something that was vegan. It's the best.

So get going my peeps!

This recipe will NOT disappoint!

Preparation

  1. Preheat oven to 325.
  2. Take the cookie dough and place right next to each other on a baking sheet. Take a spoon and press down on each cookie dough until it gets thin enough so you can make it into a big cookie.
  3. Bake for 13-15 mins.
  4. Remove from oven and let it sit.
  5. Cut your strawberries and kiwi to your liking. It's really up to you. I prefer them somewhat big!
  6. Once the crust has cooled off spread icing. Be generous! The more icing the better:)
  7. Place your fruit all over the pizza!
  8. Let it chill in the fridge for 15 mins before eating.
  9. ENJOY!!
